Compassionate Cuisine

For over 10 years, I served as the Director of Compassionate Cuisine, an award-winning vegan culinary program at Catskill Animal Sanctuary. One of my proudest accomplishments was championing the writing and development of the Sanctuary's cookbook, Compassionate Cuisine: 125 Plant-Based Recipes From Our Vegan Kitchen (Skyhorse Publishing).

This is more than a cookbook. It was a passion project. My vision was to inspire people to try vegan cooking by giving them a peak into the magic of the Sanctuary. Through recipes taught in our cooking classes and served at events along with heartwarming stories of the animals who call Catskill Animal Sanctuary home, the hope was to inspire people to try food made from plants, not animals.

Reaping the health rewards of plant-based eating is reason enough to consider adding more plants to your plate, but the benefits for the animals and the planet are equally undeniable. Why cause harm and suffering when you can enjoy amazing food that's just as satisfying and delicious?

The response to the book has been wonderful and rewarding, with many fans saying Compassionate Cuisine is their new favorite cookbook. There are chapters on how to set up your vegan kitchen, substitution charts for things like eggs and dairy, and the 125 savory and sweet plant-based recipes include Sanctuary favorites such as:

Blueberry Praline French Toast Casserole
Buffalo Cauliflower
Swedish Meatballs
Chipotle Sweet Potato Stew
Coconut Cream Pie
Chocolate Chip Cookie Dough Truffles
… and unbelievable vegan cannoli!

You can buy the cookbook directly through the Sanctuary and 100% of the proceeds go to the care and feeding of over 300 animal residents who have been rescued from neglect and cruelty. The book can also be purchased through Amazon. However you choose to purchase it, please buy a copy for yourself and then buy one for someone you love!
